Quesadilla Crazy!

I think I’ve gone a little overboard. I bought a 10 pack of soft flour tortillas and I’ve used them everyday since. This isn’t a healthy go to meal but it’s so easy and I’ve been so busy that it works for me. The great thing about it as that you can add a medley of anything you want inside. I made mine with shredded cheese, onions, peas, shrimp (one night) or ground veggie burger (the next night) between two soft tortillas in the oven for about 15 minutes and there’s your quesadilla! Maybe add a salad to the side and an extra workout that week to balance out all that starch! 🙂

Fried Catfish & Tahini Salad

Overnight marinating catfish does wonders for its final fried-ness. Black pepper, Cajun spices and seasoned salt tastes amazing. Fish fry and medium low heat with a bit of oil to coat the pan is all it takes! My salad contains shredded carrots, grape tomatoes and tahini dressing. A love raw onions, hot sauce and mustard with my fish. I’m excited to dig in! Happy, healthy eating! 🙂

Veggie Filled Frittata

So tired of your eggs scrambled or fried for breakfast? Me, too! I tried this tasty one skillet wonder: frittata! I seasoned and cooked chopped asparagus, grape tomatoes and onions in a bit of vegetable oil and a dash of vinegar. Then I scrambled three eggs, a little milk and seasoned it and gathered all the ingredients in one large skillet. It was so so good. You can also try scrambling your eggs and adding all the veggies in that way. I topped it off with a bit of mozzarella and cheddar cheese. (Parmesan is the signature addition that I didn’t have in my kitchen) What a tasty way to start your day?! 🙂

Citrus Veggies on Salmon

I tried a new recipe tonight and I’m very happy with it! Bake the salmon for 25 minutes. Asparagus, squash, onions and cranberries simmers in a bit of vinegar and lime juice (half of a lime). It was a light and tasty combination. Try it out and share your thoughts with me:)
